Transforming Food Deserts into Food Oases

Arriving in Chicago’s Roseland community, participants will tour one of two mobile food buses that were retrofitted from Chicago Transit Authority (CTA) buses, and operated by Fresh Moves on Chicago’s south and west sides. These retail produce markets accept SNAP card benefits and are the first of their kind in the Midwest, garnering national and international attention. Next, participants will meet a Roseland native, entrepreneur and licensee for Save-A-Lot “limited assortment format” stores in Chicago who is customizing his stores to each community served. His Roseland store that we will visit offers a butcher counter, for example, to enhance the shopping experience and provide job training in a skilled career path. While in transit, a Chicago-based community development financial institution (CDFI) will discuss its financing program, based on a national model, to provide retailers and others in the food desert supply chain access to affordable capital to start and grow their businesses.
